It's a reference to Gandalf's fall down the chasm in Moria with the Balrog. In the book, he describes the fall as lasting until they came to "the uttermost foundations of stone." Since the movie starts with a flashback of that fall, "Foundations of Stone" was chosen as the title. Many of the soundtrack track titles are drawn from the books.
"Olorin I was in the West that is forgotten...."
